Cette gravure anglaise dépeint les différentes étapes de la fabrication du thé en Assam, en Inde. Les feuilles de théiers sont délicatement ramassées à la main, car il ne faut pas endommager la plante afin de favoriser la repousse de nouveaux rameaux.

Vous pouvez voir ici, entre autres, les deux étapes du processus de séchage. Celui-ci élimine l'humidité résiduelle et empêche la fermentation du thé qui amènerait une altération du produit durant le transport.

This English etching describes the operations needed to the making of tea. The tea leaves will be carefully reaped by hand to avoid damaging the branches, so that the tree will grow new shoots.

We can see here the drying process of the leaves in two steps, first by exposure to air, then by heating them in shallow pans. Dessication eliminates moisture and prevents the fermentation of tea which would cause an alteration of quality during transport.
